Cake with anchovy and onion
Our students had a good time preparing this Catalan dish. We hope you’ll enjoy it as much as we did.
Ingredients (20 seats):
Dough:
- 2 kg. de flour
- 3 eggs
- 100 gr. lard (pork)
- 3 Tbsp. salt
- water
Topping:
- 2 kg. onions
- 60 anchovy fillets
- 1 garlic bulb
- 50 gr. parsley
- 250 cl. olive oil
- Paprika
Preparation:
Shape a volcano with the flour and put the 3 eggs in the center along with salt and lard.
Mix with fingertips to make a paste.
Add water gradually and knead until getting a compact and tender dough.
Let the mixture stand covered for 1 hour. Then stretch.
1. Put the red paprika.
2. Then the onion fine-cut.
3. Put a pinch of garlic, parsley and oil.
4. Add a drizzle of olive oil on top.
5. Finally, put the anchovies.
The day of the lab, the students of Kitchen & Gastronomy in Via Magna did a twist typical of Basco Country: put salted instead of marinated anchovies.
